quinoa stuffed peppers

1 cup quinoa
6 medium bell pepers
3 Tablespoons olive oil
1 cup diced carrot
1 cup chopped onion
1 cup diced celery
3 cloves garlic
1 1/2 teaspoon cumin
1 1/2 teaspoon coriander
1/2 teaspoon red pepper flakes
1 1/2 cup corn
2 cup sharp low fat grated cheese
1. Boil 2 cups water, add quinoa and simmer for 15 minutes
2. Cut peppers in half lenghtwise, remove seeds, leave stems on
3. Spray outside of peppers with spray and place face down and roast 15 minutes at 400 degree until soft
4. Meanwhile in skillet saute vegetables and spices until tender
5. Combine quinoa to vegetable mixture
6. Spoon mixture into pepper shells and sprinkle with low fat cheese. B ake 10 minutes at 350 degrees to melt cheese
